If your boyfriend doesn't like daiquiris you gotta let that mango.

Ingredients

  • Homemade Low Carb Coconut Rum:
  • ¼ cup unsweetened coconut flakes
  • 1 cup lite coconut milk
  • 3 tablespoons Powdered Monk Fruit Sweetener
  • 1 teaspoon coconut extract
  • 6 oz white rum
  • Cocktail
  • 6 oz Tropical Citrus Perfy
  • 6 oz Homemade Low Carb Coconut Rum
  • ½ cup frozen mango chunks
  • 8-10 ice cubes
  • 2 tablespoons lime juice
  • 3 teaspoons liquid allulose
  • 1 tablespoon unsweetened coconut flakes (optional)

Instructions

  1. Make the coconut rum by adding the coconut, coconut milk and sweetener to a small saucepan and stir over medium heat for 5 minutes.
  2. Remove from heat to cool, then add to a small blender.
  3. Process until smooth, then strain through a nut bag into a cup.
  4. Stir in the rum and extract. This makes 2 servings (about 6 ounces).
  5. To make the cocktails, add the Tropical Citrus Perfy, 3 oz coconut rum, mango, ice, lime juice, sweetener, and coconut (if using) to a small blender
  6. Process until smooth.
