If your boyfriend doesn't like daiquiris you gotta let that mango.
Ingredients
- Homemade Low Carb Coconut Rum:
- ¼ cup unsweetened coconut flakes
- 1 cup lite coconut milk
- 3 tablespoons Powdered Monk Fruit Sweetener
- 1 teaspoon coconut extract
- 6 oz white rum
- Cocktail
- 6 oz Tropical Citrus Perfy
- 6 oz Homemade Low Carb Coconut Rum
- ½ cup frozen mango chunks
- 8-10 ice cubes
- 2 tablespoons lime juice
- 3 teaspoons liquid allulose
- 1 tablespoon unsweetened coconut flakes (optional)
Instructions
- Make the coconut rum by adding the coconut, coconut milk and sweetener to a small saucepan and stir over medium heat for 5 minutes.
- Remove from heat to cool, then add to a small blender.
- Process until smooth, then strain through a nut bag into a cup.
- Stir in the rum and extract. This makes 2 servings (about 6 ounces).
- To make the cocktails, add the Tropical Citrus Perfy, 3 oz coconut rum, mango, ice, lime juice, sweetener, and coconut (if using) to a small blender
- Process until smooth.
